You lose that when you get three restaurants and have to rely on others to implement your ideas. Your focus has become that of entrepreneur and money maker, your passion is no longer in achieving perfection because no one is going to perfect your ideas and maintain quality and precision in those ideas like you. Tom Power' passion at Fat Canary is in his presence and it shows in the staff's performance and in the consistent quality of the product, staff and environment. Fat Canary is an experience. The Trellis is a quality establishment with a quality chef but Fat Canary takes it a step further with hands on quality control and verified perfection.

Have been going to this restaurant 1-2x/yr when visiting Williamsburg. Good experience each time. Best fried oysters I've had anywhere to date. Good beer selection for a higher-end restaurant both draft and bottles. Since having a baby, didn't think we would be able to go back but called ahead and they were able to accommodate us and our baby on a Saturday night. Have not had a disappointing meal yet, which cannot be said for many other restaurants. Will continue coming back.

My wife and I went here for our anniversary we ate inside. i thought the atmosphere was terrific the waiting staff was absolutely on point. Friendly and quick to remove used planets or refill water glasses. The food was the best I have had in town. This was my forth place to visit but I can say I will be back. Highly recommend!

One of the most gratifying restaurant experiences I've had. The cozy ambiance set the tone for dining pleasure. Every staff person was pleasant and welcoming. The food was excellently prepared and proportionally satisfying.

My wife and I went to the Trellis last night. It was much better than the first night they opened under David Everett's ownership. They've come a long way but dispite the improvements, the better menu and innovative, eccentric ideas and events, Fat Canary still takes #1. At Fat Canary, there is an attention to detail and quality control that comes with the owner and chef being present and proactive from preparation to closing. He's watching and reviewing every plate that is prepared as it goes out to the guest. He is expecting perfection and reinforcing that expectation throughout the service to his staff.

After a long hot day at Williamsburg, we found the Fat Canary. William was our server and he was very accommodating. We started out with a nice selection of local beers and then my wife and I split the hearts of Romaine salad and had the house made mozzarella and Virginia ham with basil pesto and heirloom tomatoes and balsamic. For dessert my wife enjoyed the profiteroles and I had the really wonderful dark chocolate mousse triangle. A lovely evening and wonderful food with great service.
